Caprese Salad
Honestly I am usually not a huge raw tomato fan. When summer hits it’s a different story, I am ready for a delicious Caprese Salad. Maybe it has something to do with the big chuck of mozzarella cheese that is involved? Give me anything with cheese and it’s good to me 🙂 Caprese Salads are a great summer side with minimal ingredients. I often volunteer to help “cook” dinner if David grills and I make the Caprese. It’s a win win for me, less work and deliciousness.
Caprese Salad
2 Servings
1 large tomato
1/2 ball of fresh mozzerlla
2 large or 4 small basil leaves
2 T olive oil
2 T balsamic vinegar
salt & pepper
Slice the tomato into 2 large slices. Slice the mozzarella ball in half and cut into 2 pieces (save the other half for another meal). There is often a little end piece that I cut off and snag to enjoy. Layer the basil, then the tomato slice, followed by the mozzarella slice.
Top the stack off with the olive oil, balsamic vinegar, and of course salt and pepper.
Super simple and so summer fresh! A perfect summer side or starter to any meal.
