Chicken, Mushroom, & Spinach Quesadillas
If you haven’t guessed it yet, I heart Mexican food! Chicken, Mushroom, and Spinach Quesadillas take your average chicken quesadillas and puts a spin on them. These are what I like to refer to as healthy quesadillas. Anything with spinach in them is healthy right? Really, they are better for you with the added vegetables and less cheese than the usual quesadilla.
Chicken, Mushroom, & Spinach Quesadillas
5 flour tortillas
1 1/2 C diced cooked chicken breast
2 C mushrooms
1/4 white onion
2 C spinach
2 garlic cloves
1 C shredded cheddar cheese
1 t cumin
1 t chili powder
Dice the mushrooms and onion. Chop the spinach.
Saute the mushrooms and onions for about 5 minutes. Add in the minced garlic and chopped spinach. Saute 2 minutes. Combine in the chicken, cumin, and chili powder.
Set up a workstation for filling and cooking the quesdaillas. Butter a flat pan to crisp the quesadillas on. Fill a tortilla with the filling and top with the cheddar cheese and fold over. Cook on the hot pan until golden brown and flip. Repeat this process for each quesadilla.
I think the best way to eat the quesdaillas is to cut into thirds and serve with sour cream, salsa, and of course homemade guacamole.
These warm cheesy quesadillas are something you will want to eat more of and don’t worry the calorie count is low enough that you can. Like I said….anything with spinach in it is healthy 😉

Really? I can’t answer that question but Enchiladas, Quesadillas, and Burritos are all amazing in my mind.
