Breakfast Burritos-On the Go

Happy Martin Luther King day! Was anyone as lucky as me and actually got today off? Since David had work today and trying to convince my sister to take the day off didn’t work I decided to make today a day of catching up on sleep and household chores. I also got a long run of 7 miles in, I know I know I said no long runs (to me anything over 5 miles is considered a long run) until half marathon training, but I just couldn’t resist with the extra hours of freedom I had today. I decided to cook up my Breakfast Burritos on the go as well. These are perfect to have on hand for quick grab and go breakfasts or I sometimes even pack them in my lunch when I haven’t prepared anything to take with me to work. You make them now, freeze them, and grab them when you are on the go 🙂 just reheat in the microwave for 75 seconds and you are all set to enjoy a yummy breakfast burrito!

Ingredients

Breakfast Burritos-On the Go

10 flour tortillas (fajita size)

10 eggs

1/4 C milk

10 slices Canadian bacon

1 1/4 C Mexican cheese blend shredded

1 C salsa

Saran Wrap

Scramble the eggs with the milk and cook until you have scrambled eggs, make sure to salt and pepper the eggs as you cook. Lay all 10 tortillas on a clean surface. Divide the eggs evenly among the tortillas; it’s best to place the toppings for the tortilla to one side of the shell, it makes it easier for wrapping each of the burritos. Top each tortilla with about 2 T of the shredded cheese. Dice the Canadian bacon into small pieces and top the tortillas evenly. Top off each burrito with 1 T of salsa.

Fold over the end of the burrito that is closest to your toppings. Fold in each of the 2 sides and roll your burritos closed.

Wrap the burritos individually in Saran wrap and place in a freezer bag.

Now you have 10 Breakfast Burritos that are easily assessable for when you are on the go. Just microwave for 75 seconds and it will be the fastest Breakfast or Lunch yet.

On a side note, since we are discussing Burritos. David make these cheesy yummy goodness chicken burritos on Friday night for dinner. I guess they are technically called Crispy Southwest Chicken Wraps, but they were to die for good! He adjusted the recipe with less cheese, sour cream, and also used fajita wraps instead of burrito wraps to make them a little healthier. He then made homemade guacamole for dipping on the side. These will defiantly be a staple dinner around our house! I will have to share our homemade gauc recipe in a post to come.
