Chicken Cranberry Apple Almond Salad Wraps
I am a big believer in packing lunches for work. Not only does packing lunches prevent you from spending unnecessary money, but it also allows you to eat a healthier lunch. I always enjoy exploring new packed lunch ideas. Chicken salad recipes often sound appalling to me because of the key ingredient that is in most chicken salads mayo. I have never been a fan of mayo, so I created this recipe using an alternative-Greek yogurt. Although most chicken salads are served on bread I decided to use a wrap. This is a light lunch that really works anytime of the year.
Chicken Cranberry Apple Almond Salad Wraps
1 roasted chicken (shredded)
1 gala apple
1/2 C celery
1/8 C dried cranberries
3 T sliced almonds
1 C fat free plain Greek yogurt
2 T Dijon mustard
1 T rosemary
6 large wraps (I used Whole Grain White SoftWraps)
Dice the apple, celery, and dried cranberries. Mix together with the chicken, almonds, oregano, and a dash of S&P.
Whisk together the Greek yogurt and Dijon mustard.
Add the Greek yogurt sauce to the chicken and fruit. Mix until combined. Add about 3 heaping tablespoons to each wrap.
Roll shut, I used a toothpick to ensure the wrap would stay closed.
I went ahead and created all the wraps and packed in tupperware for lunches so we could easily grab them each morning for our lunch. I love being able to pack all the lunches for a week at once, makes the week a little smoother when you can check that off your list ahead of time.

Those look amazingly good! Thanks for the recipe! I usually eat at home between clients, and love stuff like those wraps. If I’m going to be out during lunch, I take something to tide me over until I can get home to eat.
