Guacamole
Who doesn’t like guacamole? For some reason I told myself I didn’t like it for years, until I finally tasted it at my sister’s apartment in college. Yes-I still remember it, because it was that good! How did I never try this fresh green delicious dip ever before. My favorite way to eat it is with a Corona on my balcony enjoying the summer weather…….but it looks like we have a few more months before that will happen again. Guacamole has become a staple side dish to any Mexican dish made in our household. Here is how we make guacamole.
Guacamole
1 avocado
1/2 jalapeno (seeded)
2 slices red onion (thin)
2 T cilantro
2 T lime juice
2 t salt
2 t pepper
Mash the avocado.
Dice the japalapno, onion, and cilantro. Add to the avocado.
Stir in the lime juice, salt, and pepper.
Guacamole goes great with any Mexican side dish or like I mentioned, goes great with a corona or 2 and the summer air!
