Healthy Chicken Taquitos
On to another Mexican recipe-does that surprise you?!? I am not a fan of the frozen or gas station taquitos you can make in an instant or grab on the go. Something about not knowing what they are filled with freaks me out a bit. These are super simple (really I swear) to make! If you aren’t feeling the fillings I picked to create mine feel free to remove or add in your own choices. You really could make these healthy taquitos a zillion ways.
Healthy Chicken Taquitos
2 chicken breasts
4 oz cream cheese (1/2 block) softened
1 C salsa
2 C spinach
1/2 C shredded cheddar cheese
8 flour tortillas
lettuce and additional salsa to top
Cook the chicken breasts at 400 degrees for about 20 minutes. I did this ahead of time so they chicken could cool so I could easily shredd the chicken.
Mix together the softened cream cheese and salsa until most of the clumps are blended in (this picture doesnt look pleasant, but trust me it will be good).
Chop the spinach.
Set up a station to easily create the taquitos.
Fill each tortilla with chicken, cream cheese/salsa mixture, spinach, and cheddar cheese.
Roll each tortilla tight to best keep in the filling. Don’t worry if a little falls out on the ends.
Heat a skillet to medium-high and grease with butter. Cook each tortilla until golden brown and flip.
I topped the taquitos with lettuce and had both green and red salsa on the side. I also made a side of gaucamole to top them with, everything is better with gaucamole! I proably should of waited to add the salsas for a prettier picture, but I was ready to eat at this point.
