Thai Chopped Salad (Panera Copycat)
One of my favorite places to go for lunch is Panera. Sandwiches, Salads, and Soups, what I consider the best options for lunch. My favorite salad to order at Panera is the Thai Chopped Salad. Since I am a big believer in bringing packed lunches to work I decided to recreate this vegetable loaded salad.
Thai Chopped Salad
3 bunches of Romaine lettuce
2 red peppers
1/2 package of baby carrots
5 green onions
1 C cashews
1/2 package of frozen edamame (defrosted)
1/4 C cilantro
Kraft Asian Sesame Dressing
Wonton Strips
Chop the carrots and red peppers into diced size pieces.
Start with sauteing the carrots for about 5 minutes on medium-high heat.
Add in the red peppers and edamame and saute for an additional 3 minutes. Salt and pepper the vegetables.
Pour the vegetables into a bowl to cool. Notice the char on the edamame just like Panera does? Yum!
Wash and chop the romaine.
Dice the cilantro and green onions.
Chop the cashews. I recommend using a chopper device such as a food processor to speed up the process. Just make sure to not shop the pieces into too small of pieces.
Combine the cooled vegetables, lettuce, cilantro, green onion, and cashews in a large bowl.
Serve the salads with the Sesame Asian dressing and top with wonton strips.
